King trumpet mushrooms; a member of the oyster mushrooms, formally known as Pleurotus eryngii.
These mushroom have a mild buttery flavor and a fantastic firm, crunchy texture. They have a very long shelf life refrigerated at temperatures around 35 degrees. They can last a month or longer.
King Trumpets are great sautéed, or cut up fresh into salads. Some simple ways to use these mushrooms are to slice them vertically into small pieces and cook them in your choice of fat. They make a wonderful, simple and healthy alternative for scallops.
They can also be sliced thin and horizontally then marinated in a smoke sauce with smoked salt, a bit of smoked paprika, some chipotle powder, some maple or brown sugar, and a bit of pepper. Then either bake or fry them on medium heat and use them as delicious imitation bacon on a BLT or as a side with your pancakes in the morning.
They are delicious cooked into sauces, gravies and soups, And in pasta dishes such as risotto or lasagna. King Trumpets are a hearty addition in quiches, casseroles and potpies. Pairing well with a variety of vegetables such as onion, garlic, shallots, peppers, eggplant, spinach, and arugula to name a few. They compliment nicely with rice, quinoa, millet and polenta.
